Food for Angels

 There could be a day for every cake and a cake for every day, today belongs to angel food.

 According to the article on NationalToday.com, Angel Food cake was developed by slaves in the mid 1800s or by Pennsylvania Dutch.

 It's a low-carb cake made with thoroughly beaten egg whites plus flour and sugar. It's hard work beating egg whites by hand, as would have done in the 19th century, or can be done now with a food processor.

 African-American tradition includes angel food cake at funeral receptions to mark a transition from this life to joining the heavenly host. For Dutch, it's symbolically asking angel blessings on the newlyweds.

My paternal grandmother is the first person I remember making angel food cake. The light, chewy, and airy texture was an immediate hit.

My wife is an excellent baker who can make a variety of wonderful pastries and indulges me with angel food cake from time to time and on special occasions, like my birthday. Most years, like this year, the cake was topped with chocolate icing. It goes great with ice cream.

It may be the dessert of angels, but people love it too!
