National Pancake Day, Part II

 Pancakes are so popular, they have two national days. One is known as Fat Tuesday or Shrove Tuesday, the day before Ash Wednesday and the start of Lent.

 Easter falls on the first Sunday following the first full moon after the vernal equinox (arrival of spring). Lent starts 46 days before Easter. Simple.

 Simpler is this second National Pancake Day, which happens every September 26.

 According to a survey of 1,000 people 93% of them like pancakes. The three most popular flap jacks are Buttermilk, Blueberry, and Chocolate Chip.

 We had pancakes last weekend at the Vessel Cafe that were practically perfect. They had enough weight to be substantial while staying light and fluffy and it was delicious.

The same survey asked what people put on their pancakes. The overwhelming winner is syrup with 62% of the vote. The runner-up is butter, got 10%.

I don't treat myself to chocolate chip hot cakes often but when I do, my preferred version has chips baked into the pancake with a few sprinkled over the stack. 

When I get them that way, I don't use syrup, all I need is soft, warm butter for the perfect flavor.

Pancakes aren't just for breakfast anymore. They perform well as a dinner entree. 

They can be the same as what you enjoy for breakfast with bacon on the side, or you can get savory by making potato pancakes with apple sauce.

Morning or night; fluffy or thin; sweet or savory; with two holidays to worry about, you can bet pancakes aren't going anywhere except your kitchen table.
