Dr. Stephen Babcock doesn't get enough credit, but he may be one of the most important inventors ever.

In 1890, he invented a milk-fat test.  As you might guess, it measured the fat content of milk. That test lead to standards for milk inspection and pricing milk based on the amount of fat instead of weight.

He refused to apply for a U.S. Patent, making it available to all.

Before farmers could be tempted to water down milk; it would weigh more and worth less.

He taught at the University of Wisconsin from 1887 to 1913.  As a clue to the importance of his test and his work developing 'cold storage' for curing cheese as well as improving cream separators - he may be most responsible for the Wisconsin becoming the Dairy State.

His name is on the building where succeeding generations of his work continues.  It is home to the Babcock Hall Dairy Store - which simply has ice cream without equal.  OK, some might come close, but I encourage you to test me on this.

I consider missing out on Babcock Hall for the first 49 years of my life as one of the worst omissions I've made.

You can order a sandwich at the store or order a gift basket (which you can do online as well), but your first visit must include ice cream.

There is an observation area on the second floor to see the operation at work.

It was quiet the day of my visit, but still interesting to see the gleaming stainless steel ready to work.

Especially knowing their work creates such delightful and delectable treats.  Plan your visit; return trips will take care of themselves.
